Another thing is the market, especially if the seller is not a reseller, but the owner himself. He will be able to tell what he fed the pig, because the quality of the product depends on this.

It’s not enough to buy lard and prepare it, you need to preserve it just as tasty and healthy:

  • fresh stored in the refrigerator for no more than 10 days, frozen - 3-4 months;
  • smoked will not lose its taste for six months if stored in the refrigerator and for more than a year if stored in the freezer;
  • lard can be stored for a long time - about 3 years, but only in glass, well-sealed containers in the refrigerator;
  • salty– in the refrigerator for no more than a month, in the freezer – about a year;
  • highly saline can be stored on the balcony or in rolled up cellar jars for up to six months.

When buying a large piece, do not rush to process it immediately. Divide into pieces, place in the freezer and cook in small portions as needed.

How to cook

Is it healthy to eat salted lard? All methods of salting pork lard save useful qualities and properties.

If the product is intended for children or you simply do not really trust cleanliness, it is better to prepare it hot - boil it, rub it with spices and put it in the refrigerator.

For those for whom hot spices and large amounts of salt are contraindicated, you can make lightly salted salsa or make lard from it– Heat over low heat and put in a tightly screwed jar in the refrigerator.

Frying with it is healthier than frying with butter.

Smoked lard is not for everyone. This is an unnecessary burden on the liver and pancreas. Smoking may not be traditional, but using “liquid smoke”.

But smoked lard can be stored for a long time without losing its taste.

Simple recipes

Dry pickling

A well-washed and dried piece is laid out on a cutting board. Cuts are made in the pulp where the garlic is stuffed.

Salt, ground pepper, cumin or other seasonings are mixed to taste, a piece of lard is rubbed and sprinkled with them.

Careful not to shake off the spices, wrap the piece in foil and refrigerate for 2 weeks.

The benefits are enhanced by the addition of garlic. The taste is simply excellent.

Hot salting

You will need husks of 5-7 onions, 5-6 peppercorns, bay leaf, salt, spices to taste. The husk is boiled for 5 minutes in such an amount of water that will completely hide the lard cut into large pieces.

The heat should be reduced and the husks should be simmered for 10 minutes. Grind pepper, bay leaf, add other seasonings. Rub a mixture of spices into the cuts on the lard and sprinkle them over the entire piece.

Wrap in foil and put in the freezer. It is considered fit for consumption after the piece is completely frozen.

In a slow cooker

Soak the onion peels, then rinse and put half of them on the bottom of the bowl, then put a layer of lard, bay leaves and peels again, pour everything with a brine of sugar and salt and put on simmer mode for 1 hour.

After turning off the multicooker, leave the lard in the brine for 8-10 hours. Then dry, rub with crushed garlic and any other spices. Keep in the freezer until completely frozen.

Contraindications and restrictions

The principle when using is to know when to stop. No matter how tasty it is, it is simply contraindicated to overeat.

People with excess weight, diseases of the pancreas and biliary tract should use with caution.

Metabolic disorders can also serve as a contraindication to the consumption of lard. Both types are not directly prohibited, but you need to know what foods you can eat it with.

Lard should not be too salty or spicy, and the amount eaten should not exceed 30 g per day.

Use in folk medicine

This is very old folk remedy which helps with many diseases:

  • they treat colds;
  • joints for arthritis, inflammation and injuries (use lard);
  • nursing mothers treat mastitis by applying lard to the breast;
  • placing a piece of fresh lard on aching tooth, you can relieve pain;
  • mixed with celandine juice, nightshade herb and egg white(everything is infused) helps well with weeping eczema;
  • very effectively restores after serious illnesses and operations;
  • Helps get rid of heel spurs.

Eating lard is a matter of taste; some people simply don’t like it. But you shouldn’t refuse just because it’s supposedly harmful.
