Chocolate muffins with raisins and chocolate can be made at home simply, quickly and using simple ingredients that you always have on hand. The cupcakes turn out very soft, aromatic, with a pronounced chocolate taste. A wonderful pastry for morning coffee or a cup of milk.

To prepare cupcakes, prepare the ingredients according to the list. You can buy chocolate powder ready-made, or you can grind half a chocolate bar on a very fine grater. The easiest way to do this is if the tiles will lie in the refrigerator for several hours. If there is no chocolate in the house, you can replace it with cocoa powder. Use a gold label for cocoa; it will make the finished cupcakes taste like dark chocolate. If you have a silver label, then I would advise adding a little more cocoa to the dough than 2 tablespoons. Eggs and milk should be at room temperature.

First of all, boil water in a kettle and pour hot water over the raisins, let them swell. In a deep bowl, mix eggs with sugar.

Place the oil in the microwave for 30 seconds. Add butter and milk to eggs. Small lumps of butter will disperse completely after mixing with flour, don’t let this bother you. Although you can melt the butter completely, let it cool, and then add it to the eggs with sugar.

Add chocolate powder and continue whisking.

Lastly, add the sifted flour and baking powder, mix the dough until smooth so that there are no lumps.

Squeeze the raisins from the water, dry with a paper towel, add to the dough, and mix again.

Place a full tablespoon of dough into a muffin tin and bake at 180 degrees for 20 minutes.

Cool the finished muffins; a crispy crust will form on the surface after baking. Place the cooled cupcakes in a plastic bag and let them sit for a while. After 30-40 minutes the cupcakes will become soft.

Chocolate cupcakes with raisins. Photo

Chocolate raisin cupcakes recipe with step by step photos. Delicious and soft cupcakes with juicy raisins inside and sugar-nut topping on the outside. Chocolate (cocoa) and raisins, to put it mildly, do not go well with the concept of proper nutrition. I found a way out of this situation - I make cupcakes for friends. They get their share of pleasure from the taste of chocolate cupcakes, I get my share of pleasure from contemplating their satisfied faces. The calorie content of one cupcake (42 grams) is 137 kcal, the cost of one cupcake is 5 rubles.

Ingredients:

To make chocolate cupcakes we will need (for 22 cupcakes):

cocoa powder - 2 tbsp. (30 grams); wheat flour - 1.5 cups (150 grams); sugar - 1 cup (200 grams); raisins - 100 grams; chicken eggs - 2 pcs. (50 grams); natural yogurt - 100 grams; butter - 100 grams; walnuts - 50 grams; baking powder - 1 tsp.

Preparation:

First, soak the raisins in hot water; you can add a couple of tablespoons of cognac or rum to the hot water.

In a bowl, beat two eggs and a glass of sugar using a mixer.

Melt the butter in a separate bowl (can be done in the microwave).

Then the melted butter needs to be cooled slightly (about 5 minutes).

Add melted butter and yogurt to the beaten eggs with sugar, mix with a mixer until smooth.

Then add the sifted flour, cocoa powder and baking powder.

Beat the dough with a mixer until the flour is completely dissolved.

Drain the raisins from the water in which they were soaked.

Add raisins to the dough.

Stir the raisins into the dough using a spoon.

Chop the walnuts with a knife.

Let's distribute the dough into muffin tins; you can use paper, silicone or metal molds; the latter need to be greased with oil so that the muffins do not stick to the mold. I use different sized paper muffin cups and made 22 muffins. The molds must be filled with dough not completely, but somewhere around 2/3, so that the dough does not “float” out of the mold during baking.

Sprinkle the tops of the cupcakes with chopped walnuts and sugar.

Place the cupcakes on a baking sheet and place in an oven preheated to 180 degrees for 20-30 minutes (depending on the size of the cupcakes).

After about half an hour, remove the baking sheet with muffins from the oven and let cool slightly.
