Maslenitsa is in full swing. According to an already established tradition, during Maslenitsa week it is customary to have noisy fun, visit people, and treat everyone to pancakes.

Today we will also bake pancakes, but not simple ones, but liver ones, from which we will make a liver pie or liver cake. It will turn out delicious and beautiful. We will slightly change the traditional liver cake recipe to reduce the final calorie content and fat content in the finished dish. If no one knows about our tricks, then it will be almost impossible to notice the difference.

To make our unusual cake more tender, we will use two types of liver: beef and chicken. We will replace mayonnaise, which is included in almost all traditional recipes, with a light sauce based on sour cream, 15% fat, and minimize the amount of vegetable oil required for cooking.

  • beef liver – 450 g;
  • chicken liver – 450 g;
  • carrots – 4 pcs;
  • onions – 4 pcs;
  • flour – 120 gr;
  • eggs – 2 pcs;
  • milk – 150 ml;
  • sour cream 15% - 250 gr;
  • vegetable oil – 2 tbsp;
  • green cilantro (or other to taste) – 1 bunch


This technique will allow you to use very little vegetable oil for frying the cakes, which will significantly reduce their fat content.

Pour the liver mixture into a well-heated and oiled frying pan. The cakes fry quickly: about 70 seconds on one side, about 40 on the other. Try not to overdry them so that the liver cake does not turn out tough. As a result, you should get 7-8 cakes.

5. Prepare sour cream sauce. Mix sour cream with chopped herbs, salt and pepper, mix thoroughly.

6. Assemble the cake. Spread the first crust with sour cream sauce, place the vegetable filling on top, and add a new crust on top. After placing the last cake layer, gently press down on top to increase the contact of the cake layers with the filling. Grease the last cake with sour cream sauce. Place the finished liver cake in the refrigerator for 3-4 hours to soak.

7. Everything is ready. Calorie content of liver cake is 120.4 kcal per 100 grams, proteins – 9.49 g, fats – 5.34 g, carbohydrates – 8.67 g.

This wonderful liver pie is served cold. Small tricks, which we used, reduced the calorie and fat content of the dish. However, this will not affect the taste in any way. So, you can safely offer the dish to your loved ones, and even on festive table can also be cooked.

The only limitation you should be aware of: offal and dishes made from them should be avoided if you have high level.

How to cook a dish

Finely chop the onion and sauté with some butter. Squeeze the garlic and combine with mayonnaise. Pass the liver through a meat grinder along with sautéed onions, add salt, pepper, sugar, milk, eggs and enough flour to make a thin dough, then add vegetable oil and mix. Bake pancakes from the dough and place them on top of each other, greasing them with mayonnaise and garlic. Refrigerate. Before serving, smooth the edges of the cake, brush with mayonnaise, and sprinkle with chopped herbs. Decorate with tomato slices.

The most delicious liver cake is prepared like this:

  1. The liver (preferably fresh, not frozen) must be thoroughly washed and cut into pieces;
  2. Scroll the offal through a meat grinder into a deep bowl. The dishes should not be aluminum, as the liver mass in it may darken and acquire a “dirty tint”;
  3. Now you need to add spices to the resulting minced meat, beat in all 3 eggs, and, continuously stirring the mass with a wooden spatula, pour in the milk in a thin stream and sift in the flour;
  4. When there are no more lumps left on the surface of the homogeneous viscous mass, pour soda into the bowl and mix vigorously again. Cover the minced meat with a napkin and set aside for now;
  5. While the liver dough is “reaching”, you need to prepare the frying. To do this, it is better to cut the onion into small cubes (but not chop it), and the carrots into thin strips. For small carrot lovers, the quantity can be reduced slightly, and instead of slicing, grate it on a medium grater;
  6. Pour half a portion of oil into a heated frying pan, heat it for a minute, and lay out the prepared vegetables. There is no need to fry them, just sauté for 3 minutes over medium heat, stirring from time to time;
  7. After sautéing the vegetables, you need to transfer them from the frying pan to a deep plate and leave to cool, meanwhile, start preparing the mayonnaise dressing;
  8. Place all the mayonnaise in a convenient glass or plastic container, add fresh juice lemon and stir. Then add very finely chopped greens to the sauce. Before chopping the parsley, you can pinch off a few sprigs to decorate the top of the cake;
  9. For liver cakes, it is recommended to take a frying pan with a diameter of 23-25 ​​cm. Heat it over low heat with the remaining vegetable oil and pour out the first batch of “dough” with a ladle, distributing it over the entire area of ​​the frying pan. The pancake should not be thin - at least 7 mm, but it is not advisable to make it thicker than 1 cm;
  10. Cover the pan with a lid and let the cake sit for about two minutes. Then pry it up with a spatula and look - if the pancake is browned and easily leaves the bottom of the pan, then carefully, using a second spatula, you can turn it over and fry the other side;
  11. Remove the cake from the pan, transfer it to a flat plate and immediately begin frying the next one. While the second cake is being prepared, the first one needs to be covered with a thin layer of fried vegetables, and on top, spread the mayonnaise sauce in a thin layer with a fork;
  12. Then we do the same with the next pancake - and so on until the dough is finished. The topmost cake, on top of the mayonnaise filling, can be decorated with sprigs of herbs, and immediately before serving - with quarters boiled eggs, laid out beautifully;
  13. As a side dish for liver pie, mashed potatoes or vegetable salad. To avoid overloading your stomach a large number calories, it is better to season the salad with vegetable oil.

All you need is:

  • 600 g liver (any);
  • 2 large onions;
  • 700 grams of fresh champignons;
  • 2 pcs. processed cheese;
  • 1 bunch of young green onions;
  • 3 teeth garlic;
  • 3 pcs. eggs;
  • 1\2 stack. flour;
  • 180 grams of light mayonnaise;
  • salt and pepper - to taste;
  • 1/2 cup milk;
  • 1/2 teaspoon of bread soda;
  • 3 tbsp. spoons of refined oil.

Cooking time: approximately 1 hour.

The number of calories per 100 grams of product is 204 kcal.

Recipe step by step:

  1. Rinse the liver; if there are veins, film and flow tubes, all this must be removed and the offal cut into pieces;
  2. Pass the liver through a meat grinder along with ½ onion. Add spices, flour to the minced meat, beat in the eggs and dilute the mixture with milk. Before completing the substitution, add baking soda and thoroughly stir in the minced meat;
  3. You need to give the soda time to act - at least 15 minutes. To do this, you need to put the bowl with the dough aside for now and start working with the mushroom dressing;
  4. The onion can be cut into thin half rings and a third of it, fry with 1 tbsp. spoon sunflower oil until half cooked. Then place the mushrooms cut into thin slices into the frying pan and simmer over medium heat for about 4 minutes, stirring occasionally;
  5. Now you can add the remaining onion, another 1 tbsp. a spoonful of oil and, adding a pinch of salt, heat the dressing for another 3 minutes. Then transfer the filling to another bowl to cool;
  6. Place all the mayonnaise in a separate bowl, add garlic squeezed through a press, grated processed cheese and finely chopped green onions. Stir everything well;
  7. Bake the cakes. To do this, pour a thick (up to 1 cm) liver pancake into a frying pan heated with the remaining oil and spread over the bottom area. Keep it covered for about 2-3 minutes, turn it over and leave for the same amount of time;
  8. Don't wait until all the layers are ready to start assembling the cake. As soon as the next pancake is ready and transferred from the frying pan to a plate, you need to immediately pour the next one and, while it is baking, work on the layer;
  9. For each cake (there should be 5 of them in total), place a layer of fried mushrooms, spread it over the surface and coat with cheese dressing. Lay all layers in this way;
  10. Decorate the top of the cake as desired, but here’s a tip for the future: cheese and offal go well with fresh tomatoes and, in addition, this vegetable, cut into shapes, serves as a very effective decoration.

  • There is no need to buy pork liver if there are visible spots on it, or strange clots - from a good one. pork liver should be an even brown color;
  • Large, hard tubes running through a piece of liver are a sign of an old animal. Taking such meat is unwise and uneconomical;
  • Minced liver can be diluted not only with milk - by replacing part of the milk with unsweetened cream, you can end up with a very tender product that melts in your mouth.
