Vacuumizers, or vacuum packers, are a relatively new phenomenon on the Russian market of small household appliances. Why are they needed, how do they work, who makes them? About this and more - in our material and comparative testing.

A sealer with a vacuum chamber (there are also tubeless ones, more about them below) performs two main actions: it pumps air out of the bag with the product, creating a vacuum there, and seals the bag hermetically. It’s simple: you put the product or finished dish in a special bag, insert its open edge into the vacuum chamber, close the lid, and then everything depends on the technical capabilities of the device: either you need to select a mode, or the device will automatically begin the process of vacuuming and sealing - this is basic “ skill" of any vacuum sealer. Many devices are equipped with a vacuum hose, with which you can pump air out of special vacuum containers, or have the ability to connect such a hose, but it must be purchased, as well as the containers themselves, which are sometimes included in the kit, but more often not.

What does this give?

Vacuum storage extends the shelf life of products several times both in the refrigerator and in the freezer (for approximate storage times without vacuum and in vacuum, see Table No. 1). In addition, when using vacuum packaging, the product better retains its original appearance - shape and color, aroma and nutrients. Vacuum packaging protects products intended for deep freezing from freezing: so-called “burns” occur on frozen products only when in contact with air.   1. The rule of first freshness has not been canceled: “there is only one freshness - the first, and it is also the last.” The packaged products must be fresh; no vacuum can save a bad product or make it good.
  2. It is important to remember that vacuum packaging extends the shelf life of products, but does not preserve them, and what is not stored at room temperature will also not be stored in a vacuum; such products must be placed in the refrigerator or freezer.
  3. Some products (for example, most vegetables) during storage release enzymes (enzymes) that can negatively affect the products - change their taste, smell, color, degree of ripeness. Therefore, before vacuuming, it is recommended to blanch vegetables for a short time, heat them in the microwave or treat them with steam. Products with a high acid content (most berries and fruits) do not need to be blanched.
  4. Flour and cereals can be stored in vacuum packaging; this prevents them from being infected by pests - bugs, moths, etc.
  5. When vacuum sealing a wet or greasy product, it is recommended to fold the edges of the bag 6-8 cm and only then put the product there, and then unscrew the edges. This is necessary so that the edges from the inside remain dry: wet and greasy ones are difficult to seal.

Vacuumers can be domestic - for home use - and professional, which, by the way, can also be used at home, especially if you have a large family and need to make large supplies.

Household vacuum sealers take part in our test, they will be discussed in some detail below, but the main differences are as follows:

  • they work with packaging (bags, film) up to 30 cm wide;
  • as a rule, they make a single, less often a double seam;
  • standard functions: pumping out air + sealing, sealing the bag without vacuuming, canceling the action;
  • the presence of modes for wet, dry, delicate products, turbo mode is not necessary for them;
  • cost approximately from 3,000 to 15,000 rubles;
  • air pumping speed - from 9 to 16 l/min., on average - 9-12 l/min.

Professional vacuum sealers:

  • work with packaging (bags, film) up to 40 cm wide;
  • a double seam is a mandatory norm for them, but sometimes a triple one (Professional chefs often vacuum liquids for subsequent freezing. When defrosting/freezing, the volume of the vacuum-evacuated liquid changes and, as a rule, a single seam breaks, sometimes a double one is not enough, but a triple one - this is already super protection);
  • the presence of modes for wet products is mandatory;

Camera or gun?

Most vacuum sealers have vacuum chambers into which a bag or film is inserted. This is convenient because you don’t have to think about how to pack: insert the bag, close the lid, select the mode - and you’re done. Vacuum sealers with chambers have one drawback: restrictions on the width of the packaging - film or bag.

The vacuum chamber can sometimes be removable; this is convenient because it can be washed if it gets dirty with food juice (as, for example, in the CASO VC 100 model that took part in testing). The non-removable camera can only be wiped with a napkin.

But there are also other types of packers - in other words, vacuum pumps, often designed in the form of a “gun”. They can work with packages of much larger sizes than those provided for devices with cameras. But they do not seal the bag, which means the bag must have a valve that closes after the air is pumped out (bags with a ZIP lock). Using hand-held vacuum pumps, you can pump out air from special containers and bottles.

An example of a household vacuum pump is the CASO My VAC 20 model. It costs 3,000 rubles, its air pumping speed is up to 9 l/min, and the compression pressure is -0.75 bar. The stationary packers that took part in the testing had slightly better parameters - speed from 9 l/min, compression pressure -0.8 bar, vacuum degree slightly higher. But it is mobile, runs on batteries, and does not need a permanent place in the kitchen; it is very compact and can be stored in a drawer. It comes with 2 special bottle caps and 10 bags.

Economy option

Cheaper packers with an air pumping function should be distinguished from vacuum packers. Their pumping speed is low; instead of a vacuum chamber, there is a pipe onto which a bag is placed. The cost of such models is about 2000 rubles, they can seal - that is, seal bags (film) and pump out a little air. Using such devices, you can create good packaging for products that need to be frozen, but you shouldn’t hope that it will greatly extend the “life” of the products in the refrigerator. Such devices do not work with special bags, but with ordinary plastic bags, so consumable packaging materials (which will be discussed below) are cheaper. Packaging: bags, rolls, containers, bottles

Actually, the types of packaging have already been listed. Many manufacturers also produce their own branded bags and rolls of film, as well as containers and bottles. Most baggers can attach a vacuum hose adapter and pack food into containers rather than bags. Often the hose is included in the kit, but containers must be purchased separately. During testing, we saw packages from 4 manufacturers and we can say affirmatively that they are almost identical, although they cost differently - the brand’s pricing policy plays a role. But the buyer can safely choose cheaper packaging - the main thing is that the sizes are suitable (they are usually standard) and that they are special bags for vacuuming; they have a dense, slightly corrugated structure, they are very different from ordinary plastic ones. But it is important to remember that if any films and bags intended for this are suitable for packaging and vacuum sealing, then for cooking dishes in them using sous vide technology and in the microwave only those suitable for this - usually the manufacturer specifies this on the packaging. Many people are interested in the question of what is better to buy: film in rolls or bags? We came to the conclusion that it is more profitable to buy film, and in some cases it is more convenient: it can be used to form a package of the desired length (the width is already set, but it can also be adjusted). For example, if you need to pack fish or homemade sausage, then film is preferable.

If you want to vacuum food for long-term storage in the freezer, then you should pay attention to the thickness of the film or bag. It is believed that packaging with a thickness of at least 0.3 mm can withstand long-term freezing. The 0.1 mm thick film may tear.

The containers are not cheap - 2000-3000 rubles for a set of 2-3 pieces, but they are reusable, and so are the bottles. Containers are convenient for packing ready-made dishes - soups, sauces, side dishes, salads, as well as foods that are subject to deformation, such as berries.

About our testing

4 models of household vacuum sealers were involved in testing, and 1 economy class model participated “out of competition”. True, “in the main race” we did not set the task of determining the best and worst model, it was more interesting for us to see in practice how they work, what they can do, especially since in the model range of each company there are models that are more expensive and cheaper, household and professional, which means they can do more or less. But still, it was not possible to completely avoid comparison, and, comparing the devices, their capabilities and prices, we discovered a lot of interesting things.

For example, the most inexpensive model turned out to be very convenient, the most expensive, despite the presence of a pump stop function when vacuuming delicate products, is not very convenient: you need to adapt to this stopping system. Almost identically priced devices turned out to have very different capabilities: one has a removable chamber (that is, the design is more convenient) and a double seam (when defrosting, the bag is less likely to tear), the other has a stationary camera and a single seam, but there are modes for dry/ wet and tender/hard foods.

We identified one common drawback - the control panels of all vacuum degassers are not Russified: apparently, this is due to the fact that such equipment is still just “trying” itself on the Russian market. Manufacturers have not set up production specifically for Russia, but this, on the other hand, is good: the same models are coming to us as to Europe, without any reductions in price due to the fact that Russian requirements for equipment are more lenient than in the European Union, and even more so in Germany, where all the brands of vacuum sealers that took part in testing come from. In addition, it was interesting to calculate whose packaging materials are the most profitable and whose are less (see Table No. 2 - Participants, opportunities, prices).
